This winter my husband and I decided to buy a new crock pot and make good use of it. We decided every Sunday would be Slow Cooker Sunday. In an ongoing effort to eat an anti-inflammatory diet, I decided to adopt a vegan diet for Lent. This week our recipe was Winter Squash, Red Lentil & Chickpea Stew.
Click the photo to get the recipe we used. I served my stew over Emperor's Forbidden Black Rice, for the added nutritional value. I typically cook my rice in half vegetable broth and half water, for added flavor.
I do alter my food preparation to make it easier on my psoriatic arthritis. I am currently in a flare and my wrists and hands are affected, as well as my large joints. For this recipe, I purchased my butternut squash already peeled and chunked. We have a medium size crock pot, so I cut this recipe in half. We have leftovers for tonight. After all, who wants to cook on Monday?
