I apologize for my delay in posting, but have been a bit under the weather. I flared again about four weeks after my Remicade infusion and, after some blood tests, my rheumatologist and I decided to increase my dose. I infused on Tuesday, went to work on Wednesday, and woke up Thursday with typical infusion side effects: terrible headache and nausea. It took me all of Thursday and Friday to recover and, you know what? I am still in terrible pain, even with painkillers, which I do not normally need. Thank goodness this, too, shall pass (as my mother always said)!
In the meantime, I have been doing a bit of nesting at home, redecorating our bedroom and bathroom, as well as my writing space, seen above. I know it is small, but writing does not usually take me very long. I love it because it is bright, smart and fun, just like you!
In future posts, I will show you other spaces in our tiny apartment that I have cultivated for myself for healing.
In the kitchen, my husband and I have also resumed our Slow Cooker Sundays this Winter and I am really enjoying this week's recipe for Beef, Bacon & Cabbage Stew.
It is even more delicious than it looks and is Auto-Immune Protocol friendly. I altered this recipe, but you can choose to season as you wish. Lately, I cannot stand the aroma of garlic, so did not use any.
Feel free to leave your fave AIP slow cooker recipes in the comments. I'd love to try them.
